Autumn brings us closer to nature’s wild side, with a focus on the
abundance of the forests and heathlands. We draw inspiration from
the rich wildlife of the Danish landscape, presenting a menu that reflects
the season’s depth and warmth through game dishes.

Each dish is a tribute to the forest and heathlands, where game,
wild mushrooms, and other autumnal resources take center
stage – free from the influence of the sea.

At the peak of the game season, we celebrate autumn’s ingredients with
a menu that captures the intense and rustic flavors of nature.
From deer and pheasant to forest mushrooms, everything
is carefully selected to reflect the unique character of the season.

We have deliberately chosen to exclude fish and shellfish,
allowing the earthy and forest elements of autumn to dominate
the menu. This is all about pure, unadulterated flavors that
bring the authentic ingredients of autumn to life.
